Method
Blueberry-Lime Base
- 1
Muddle the fresh blueberries gently in a shaker: add 3 oz (about a small handful) of blueberries, 0.75 oz fresh lime juice and 0.5 oz simple syrup. Use a bar muddler or the back of a spoon to press and break the berries until they release juice but not completely pulverized (aim for a slightly pulpy purée). This creates the fruity foundation called the Pacific Silk base.
- 2
Fine-strain option: If you prefer a silkier texture, sprinkle the muddled mixture through a fine mesh strainer into a separate container, pressing with the back of a spoon to extract as much liquid as possible. Reserve the strained solids for another use or discard. If you want more texture left in the cocktail, skip fine-straining.
Cocktail
- 3
Combine spirits: In the shaker with the blueberry-lime base (or in the container after straining), add 2 oz silver rum (or blanco tequila), 0.5 oz vodka, 0.5 oz dry curaçao and 0.25 oz blue curaçao if using. The blue curaçao is optional and is mainly for a Pacific-hued color; omit it if you prefer the natural purple-blue from the berries.
Texture & Fizz
- 4
Dry shake (emulsion)
Add 0.75 oz aquafaba (or egg white) to the shaker and perform a dry shake (no ice) for 12–20 seconds. This emulsifies the mix and creates a silky, frothy head—hence the 'Silk' in the name.
- 5
Wet shake (chill and aerate)
Add about 1 cup of ice to the shaker. Shake vigorously for 12–16 seconds until the exterior of the shaker is very cold (this chills and dilutes properly).
- 6
Strain: Double strain the cocktail into a chilled coupe or Nick & Nora glass over fresh ice (if you prefer it on the rocks) using a Hawthorne strainer and a fine mesh strainer to remove tiny pulp and ice shards, leaving a smooth, silky liquid with a frothy head.
- 7
Garnish
- 8
Garnish with a lime wheel on the rim and a small skewer of 6 blueberries laid across the top or perched on the rim. Optionally add a dehydrated lime slice or an edible flower for an elevated presentation.
- 9
Serve immediately while the foam head is lively and the drink is chilled.
Notes & Variation
- 10
Variation: Swap the rum for blanco tequila for a brighter agave-forward Pacific Silk. Use all vodka for a cleaner spirit profile. Replace simple syrup with honey syrup (1:1 honey:water) for a floral note. For a non-alcoholic version, replace spirits with 2.5 oz chilled white tea and 0.5 oz non-alcoholic triple sec alternative.
- 11
Allergen note: If using egg white, ensure guests are aware. Aquafaba is a vegan alternative that produces a similar foam.
