Whisk the eggs
Crack the 6 large eggs into a medium bowl. Add 1 tablespoon whole milk, a pinch of the kosher salt (reserve the rest for finishing), and 1/4 teaspoon of the black pepper. Whisk vigorously until the mixture is homogenous and slightly frothy, about 30–45 seconds.

Cook gently
Heat a 10-inch nonstick skillet over medium-low heat. Add the 2 tablespoons unsalted butter and 1 tablespoon extra-virgin olive oil. When the butter is melted and foam subsides but before it browns, pour in the whisked eggs. Allow eggs to sit undisturbed for 10–15 seconds, then using a silicone spatula, gently sweep the cooked edges toward the center, tilting the pan to let uncooked egg flow to the edges. Continue low-and-slow stirring and folding (not high heat scrambling) for 3–4 minutes, removing from heat briefly if the eggs look to be cooking too quickly. The goal is soft, creamy curds. Remove from heat while slightly underdone — carryover heat will finish them.

Add tomatoes and spices
Add the halved cherry tomatoes, 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin and 1/4 teaspoon red pepper flakes (if using). Sauté until the tomatoes soften but hold some shape, about 2–3 minutes. Stir in 1 tablespoon tomato paste and cook 30–45 seconds to wake the concentrate. Finish with 1 teaspoon fresh lemon juice and remove from heat. Taste and adjust seasoning with a pinch of salt.

Sprinkle 1/2 cup crumbled feta evenly over the eggs while still warm so it softens slightly. Finish with 2 tablespoons grated pecorino or parmesan, the remaining kosher salt (about 3/4 teaspoon total used — adjust to taste) and remaining freshly ground black pepper to taste. Scatter 2 tablespoons chopped flat-leaf parsley and 1 tablespoon chopped mint (if using) over the top.

Serve immediately with 2 slices of toasted rustic bread, spooning the eggs onto the toast or placing the toast alongside. If desired, drizzle a scant teaspoon of olive oil or add an extra pinch of smoked paprika to finish.
