Fresh fruit selection
Dressing & finishing
Method
Prepare and combine fruit
- 1
Wash and dry
Rinse all berries, grapes, and other whole fruit under cold running water. Place on a clean kitchen towel or paper towels and gently pat dry. Drying prevents dilution of the dressing and preserves texture.
- 2
Hull and slice strawberries
Remove the green tops from the strawberries and slice them into halves or quarters depending on size so pieces are roughly bite-sized (about 1/2-inch pieces).
- 3
Prep grapes
If using large grapes, halve them. Leave small grapes whole. Discard any stems.
- 4
Cut pineapple, mango, and kiwi
Trim and core the pineapple, then dice into 1/2-inch cubes. Peel and dice the mango into similar-sized cubes. Peel the kiwi and slice into rounds or half-moons. Aim for uniform pieces so every bite has a balanced mix.
- 5
Combine fruits
In a large mixing bowl, gently fold together the strawberries, grapes, pineapple, blueberries, kiwi, and mango until evenly distributed. Use a rubber spatula to avoid crushing delicate berries.
Make dressing and finish
- 6
Whisk dressing
In a small bowl or measuring cup, whisk together the fresh lime juice and honey until the honey dissolves and the mixture is smooth. Taste and adjust sweetness—add up to 1 additional teaspoon honey if you prefer sweeter fruit.
- 7
- 8
Add mint and zest
Sprinkle the chiffonaded fresh mint and grated lime zest over the dressed fruit. Gently fold to distribute the mint and zest evenly. The mint brightens the flavors and the zest adds aromatic lift.
- 9
Optional seasoning and chill
If desired, sprinkle the flaky sea salt evenly over the fruit to amplify sweetness. Refrigerate the fruit for 15–30 minutes to let flavors meld, or serve immediately. If chilling longer than 30 minutes, keep covered to prevent the fruit from absorbing fridge odors.
- 10
Serve
Spoon the fresh fruit into individual bowls or onto a shared platter. Garnish with a few whole mint leaves and a small lime wedge, if desired. Serve chilled.
