    Beat eggs

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon fine sea salt and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until mixture is uniform and slightly frothy (about 30 seconds).

    Preheat pan

    Place a nonstick or well-seasoned 8-10 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1/2 teaspoon neutral oil. Allow butter to melt and foam but not brown; this creates an even, slightly slick surface for the omelette.

    Cook omelette

    Pour the beaten eggs into the skillet and let sit undisturbed for 8–12 seconds until the edges begin to set. Using a silicone spatula, gently pull the set edges toward the center while tilting the pan to allow uncooked eggs to flow to the perimeter. Repeat until mostly set but still slightly glossy on top (about 1–2 minutes total).

Filling

    Char heirloom tomatoes

    While eggs are resting or just before starting the omelette, halve 1 cup heirloom cherry or grape tomatoes. Heat a small skillet over high heat and dry-char the cut sides for 1–2 minutes until blistered and blackened in spots. Transfer to a bowl and toss with 1/2 teaspoon balsamic vinegar (optional), 1/8 teaspoon salt, 1/8 teaspoon cracked black pepper and 1/4 teaspoon sugar to balance acidity. Set aside.

    Prepare basil oil

    In a small blender or using an immersion blender, combine 8 fresh basil leaves, 3 tablespoons extra-virgin olive oil and 1/2 teaspoon lemon juice. Blend until bright green and emulsified (about 20–30 seconds). Taste and season with a pinch of salt if desired. Strain through a fine sieve if a smoother oil is preferred. Reserve for drizzling.

    Prep avocado and spinach

    Halve and pit 1/2 ripe avocado, scoop out the flesh and slice thinly. Lightly wilt 1 cup packed baby spinach: in a small skillet over medium heat, add the spinach and toss for 20–30 seconds until just wilted; remove from heat, season with a tiny pinch of salt, and drain any excess moisture on paper towel.

    Assemble filling on omelette

    When the omelette is mostly set but still glossy on top, spoon the wilted spinach onto one half of the omelette in an even layer (about 1/2 cup by volume). Arrange the charred tomatoes (about 1/2 cup) over the spinach. Fan the avocado slices on top of the tomatoes. Crumble 2 ounces soft goat cheese in small chunks and scatter over the filling.

    Finish cooking

    Fold the empty half of the omelette over the filled half using the spatula. Let cook for 20–30 more seconds, then tilt the pan and carefully slide the omelette onto a warm plate, seam side down. The inside should be tender and just set (not dry).

Finishing & Garnish

    Drizzle 1–2 teaspoons of the prepared basil oil over the top of the omelette. Sprinkle flaky sea salt (about 1/8 teaspoon) and an optional pinch of red pepper flakes to taste. Scatter microgreens or baby basil (1/4 cup) on top for freshness and presentation.

    Serve immediately while warm. Suggestion: accompany with toasted sourdough or a simple mixed-green salad.
