Combine and simmer
Place 3 cups mixed wild berries, 1 cup granulated sugar, 2 tablespoons water, and 2 tablespoons fresh lemon juice in a medium saucepan over medium heat. Stir to combine and bring to a gentle simmer.

Break down and reduce
Use a wooden spoon or potato masher to gently crush some of the berries after they begin to release juices (about 3–5 minutes). Continue simmering at a low simmer until mixture thickens and reduces by about one-third, roughly 12–18 minutes. Stir occasionally to prevent sticking.

Finish
When the mixture is syrupy and coats the back of a spoon, remove from heat. Stir in 1 tablespoon unsalted butter, 1 teaspoon vanilla extract and a pinch of salt to balance sweetness. If you want a smooth sauce, press the mixture through a fine-mesh sieve into a bowl, discarding seeds/skins; otherwise leave slightly textured. Keep warm or reheat gently before serving.

Whisk together 3 tablespoons heavy cream, 1 teaspoon confectioners' sugar, and 1 teaspoon vanilla extract until slightly thickened but still pourable. Refrigerate briefly if you prefer a thicker cream. Taste and adjust sweetness to preference.

Prep dry ingredients
In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 2 tablespoons granulated sugar, and 1/2 teaspoon salt until evenly combined.

Prep wet ingredients
In a separate bowl or large measuring cup, whisk together 1 3/4 cups buttermilk, 2 large eggs, and 4 tablespoons melted cooled unsalted butter until homogeneous.

Combine batter
Make a well in the dry ingredients and pour the wet mixture in. Gently fold with a spatula until just combined — small lumps are fine. Do not overmix. Let the batter rest for 5–10 minutes; this relaxes the gluten and yields tender pancakes. If batter appears too thick, stir in up to 2 tablespoons extra buttermilk to reach desired pourable consistency.

Cook pancakes
For each pancake, pour about 1/3 cup batter onto the hot griddle. Cook until bubbles form on the surface and edges look set, 2–3 minutes. Flip and cook the second side until golden brown, 1–2 minutes more. Transfer cooked pancakes to a warmed plate and keep warm in a low oven (about 200°F / 95°C) while finishing the rest.

Stack and serve
Stack pancakes in twos or threes. Spoon a generous ladle of warm berry reduction over each stack, dollop or drizzle sweet cream, and optionally add fresh whole berries and a light drizzle of maple syrup. Serve immediately.
