    If using frozen berries, thaw just enough so they separate; drain any excess liquid. Place 3 cups mixed berries, 1 tablespoon granulated sugar, 1 tablespoon lemon juice, and 1 teaspoon lemon zest in a medium saucepan.

    Add 2 tablespoons water and warm the pan over medium heat. Stir gently and bring to a gentle simmer so the berries begin to release juices, about 4–5 minutes.

    Mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir the slurry into the simmering berries and cook another 1–2 minutes until the compote thickens slightly. Remove from heat and let cool to room temperature (compote will thicken further as it cools). Taste and add up to 1 teaspoon extra sugar or a squeeze more lemon if desired.

Vanilla Mascarpone Cream

    In a medium bowl, combine 1 cup mascarpone, 1 tablespoon heavy cream, 2 teaspoons powdered sugar, and 1 teaspoon vanilla extract.

    Whisk until smooth and slightly airy—about 30–45 seconds by hand or 15–20 seconds with a handheld mixer on low. Do not over-whisk or the mascarpone can break and become grainy. Taste and adjust sweetness if desired.

Crunchy Oat Topping

    Place a small skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt. Stir in 3 tablespoons rolled oats, 2 tablespoons almond slivers, 1 teaspoon brown sugar, and a pinch of sea salt.

    Toast, stirring frequently, until oats and nuts are golden and fragrant, about 3–4 minutes. Remove from heat and let cool (they will crisp as they cool).

Assembly & Garnish

    Divide 6 tablespoons crushed graham crackers among four serving glasses or bowls as the base (about 1.5 tbsp each). Spoon or pipe a layer (~2–3 tablespoons) of the vanilla mascarpone cream over the crumbs.
