    Freeze bananas

    Peel the ripe bananas, slice them into 1/2-inch rounds and arrange in a single layer on a parchment-lined baking sheet. Freeze until solid, at least 2 hours or preferably overnight.

    Process bananas

    Place the frozen banana slices in a food processor or high-speed blender. Add coconut milk, honey, vanilla extract, and a pinch of sea salt. Pulse, then blend continuously, scraping down the bowl as needed, until the mixture becomes smooth and creamy (2–4 minutes). If too thick, add up to 1 tablespoon more coconut milk to reach a soft-serve consistency.

    Chill

    Spoon the soft banana cream into a loaf pan or airtight container, smooth the top, cover, and freeze for 1 hour to firm up to scoopable consistency while you prepare the caramel.

Spicy Caramel Drizzle

    Make caramel

    In a medium heavy-bottomed saucepan over medium heat, add the granulated sugar in an even layer. Without stirring, let the sugar melt at the edges and then gently swirl the pan occasionally with a heatproof spatula or by tilting the pan. Once the sugar has fully melted and turned an amber color (watch carefully to avoid burning), reduce heat to low.

    Finish caramel

    Immediately add the unsalted butter (be careful, it will bubble vigorously) and whisk until incorporated. Remove the pan from the heat and slowly whisk in the heavy cream until smooth. Stir in the ground cinnamon, hot sauce, and coarse sea salt. Taste and add an extra 1/4 teaspoon hot sauce if you prefer more heat. Let the caramel cool slightly (5–7 minutes) until warm but pourable.

    Cool to safe temperature

    Transfer the caramel to a heatproof bowl and let it cool to warm room temperature so it won't melt the ice cream completely when drizzled.

Assembly & Finish

    Scoop and drizzle

    Scoop the firmed banana ice cream into 4 serving bowls or glasses (about 3/4 cup per serving). Drizzle 1 to 2 tablespoons of the spicy caramel over each serving while the caramel is still warm but not hot.

    Add crunch and garnish

    Sprinkle about 2 tablespoons of toasted chopped peanuts over each serving. Finish with a light dusting of fresh lime zest and a small pinch of coarse sea salt on top to heighten flavors. Garnish with 1–2 mint leaves per bowl if desired.

    Serve immediately for a soft-serve texture. If you prefer firmer scoops, return assembled bowls to the freezer for 10–15 minutes, but remove 3–5 minutes before serving to soften slightly.
