    Prepare corn

    Preheat your oven to 425°F (220°C). Husk the corn: remove outer green husks and the silk threads. Rinse each ear under cold water and pat dry with a kitchen towel.

    Season and oil

    Brush each ear of corn all over with olive oil (about 1/2 tbs per ear). Then pat with a small pinch of kosher salt and a small pinch of black pepper, distributing roughly 1/2 tsp salt and 1/2 tsp pepper per ear (adjust to taste).

    Roast

    Place the prepared ears directly on the oven rack or on a rimmed baking sheet (lined with foil for easier cleanup). Roast at 425°F (220°C) for 20–25 minutes, turning once halfway through (after ~10–12 minutes) so they brown evenly. The corn is done when kernels are tender and have some caramelized or lightly charred spots.

    Butter and finish

    Remove corn from the oven. Immediately brush each ear with 1 tablespoon of unsalted butter while hot so it melts into the kernels. If using, squeeze lime juice over the ears, sprinkle smoked paprika or chili powder, and garnish with chopped cilantro. Taste and add a final pinch of salt or pepper if desired.

    Serve hot as two individual portions. Each ear is one serving; plate on a small tray or bowl to catch any drips.
