Split the vanilla bean lengthwise and scrape out the seeds. Combine the chopped figs, sugar, water, vanilla seeds and pod, and lemon zest in a small saucepan.

Bring mixture to a gentle simmer over medium heat, stirring so the sugar dissolves. Reduce heat and simmer 8–10 minutes until figs are very soft and the liquid is aromatic and slightly syrupy.

Remove from heat and let steep 15 minutes to deepen flavor. Remove the vanilla pod and discard.

Strain the syrup through a fine-mesh sieve into a bowl or jar, pressing on the solids to extract as much liquid and fig pulp as desired for body (for a clearer syrup, press less). Cool to room temperature, then refrigerate. Yield: ~1 cup. (Reserve any strained fig solids for other uses.)

Prepare cream

Lightly whip the heavy cream until it holds very soft peaks — you want a spoonable, slightly aerated cream that will float on the drink, not fully whipped butter.

In a pitcher, combine the fresh lemon juice and fig vanilla syrup. Stir until smooth. Taste and adjust sweetness or tartness: add up to 1–2 tablespoons extra syrup if you prefer sweeter, or up to 1 tablespoon extra lemon if you want more brightness.

Fill four tall Collins glasses with about 1/2 cup ice each (total 2 cups across four glasses). Divide the lemon–fig mixture evenly among the glasses (about 3 tablespoons / 0.75 oz per glass).

Top each glass with chilled club soda, pouring gently to preserve bubbles. Leave ~1/2 inch headspace for cream.

Spoon a generous tablespoon of the lightly whipped cream over each drink so it floats on the soda, creating a creamy cap that slowly integrates with the sparkling layer.

Garnish & Serve

Float a thin lemon wheel and a small fig slice on the cream cap. Optionally tuck a mint sprig behind the lemon for aroma.

Serve immediately with a straw and a long spoon so guests can stir cream into the drink. Keeps best immediately; if made ahead, prepare syrup and keep refrigerated; assemble drinks just before serving to retain fizz and cream texture.
