Smoked Chamomile-Honey Syrup

Brew chamomile
Steep 2 chamomile tea bags or 2 tbsp loose chamomile in 1 cup near-boiling water for 6–8 minutes to make a strong infusion. Strain and measure 1 cup of the brewed tea; discard solids.

Prepare syrup
In a small saucepan combine 1 cup honey and 1/2 cup water over low heat. Stir until honey dissolves and mixture is homogeneous. Do not boil—just heat enough to dissolve the honey.

Combine and infuse
Remove the honey syrup from heat, add the 1 cup strong chamomile infusion, stir to combine, and let cool to warm (about 15 minutes).

Lightly smoke (optional but recommended)
Place a small metal bowl or heatproof lid over a bowl containing the cooled syrup. Ignite a pinch of apple or cherry wood chips in a smoker box or on foil until smoldering, then capture the smoke under the bowl/lid for 30–45 seconds to impart a gentle smoke. Alternatively, use a smoking gun for 20–30 seconds. Uncover and let sit 5 minutes to absorb smoke, then cool to room temperature. Strain syrup through a fine mesh to remove solids. Store in refrigerator up to 2 weeks.

Wet shake
Add ice to the shaker (about 1 cup), then shake vigorously for 12–15 seconds until well chilled and the shaker is frosty.

Float elderflower
Gently pour (or use a bar spoon to float) 0.5 oz St-Germain over the foam so it sits as a subtle floral layer — if you used the St-Germain in the base mix, omit this float and instead add as part of the initial mixture.
