Make the syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring occasionally until sugar dissolves and the mixture reaches a gentle simmer (about 4–6 minutes).

Once sugar is dissolved, remove the pan from heat and add 1 cup dried culinary rose petals (or edible rose buds). Cover the pan and let steep for 15–20 minutes off heat to extract floral aroma and color. Taste after 15 minutes and steep up to 30 minutes for stronger flavor.

Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing gently on petals to extract liquid but avoiding bitter solids. Discard petals. Stir in 1 tablespoon fresh lemon juice to brighten the syrup and help preserve it. Let cool to room temperature.

Transfer cooled syrup to a clean jar, seal, and refrigerate. Use within 10–14 days. Yield: about 1 cup syrup.

Rose Cocktail (or Mocktail) Assembly

Prepare glass and ice

Chill a coupe or flute (for sparkling cocktail) or a highball glass (for mocktail) in the freezer for 5–10 minutes. Fill a mixing glass or shaker with 1 cup ice to chill ingredients while assembling.

Add 2 tablespoons vodka or gin (omit for mocktail), 1 tablespoon rose simple syrup, and 1 tablespoon fresh lemon juice to the shaker. If you want a more perfumed drink, add 1 teaspoon rose water; if using spirit and you like depth, add 1 dash orange bitters.

Shake vigorously for 10–12 seconds if using spirits to properly chill and dilute. If making a mocktail, stir gently with ice for about 10 seconds to chill without over-diluting.

Strain the mixture into the chilled coupe or flute (for sparkling version) or into the highball glass over fresh ice (for an over-ice serve).

Top with 3 ounces chilled dry sparkling wine for a sparkling cocktail, or top with chilled soda water (3 oz) for a mocktail. Gently stir once to integrate.

Garnish with 1–2 edible rose petals floated on top and a lemon twist expressed over the drink (twist peel over the surface to release oils) and placed on the rim. Serve immediately.

Optional Finish

For an extra aromatic presentation, sprinkle a tiny pinch of dried crushed rose petal on top or lightly spritz the finished drink with an additional 1/4 teaspoon rose water. Be careful: rose water is potent — a little goes a long way.
