Method

Cocktail

1

Prepare and chill glass

If desired, chill a double old-fashioned or tiki glass in the freezer for 5–10 minutes, or fill it with crushed ice while you prepare the drink to cool the vessel.

2

Combine ingredients

In a cocktail shaker, add white rum (2 oz), orange liqueur (0.75 oz), fresh lime juice (0.75 oz), fresh pineapple juice (1 oz), coconut cream (0.5 oz), simple syrup (0.5 oz), and 2 dashes of Angostura bitters.

3

Add ice and shake

Add 6 ice cubes to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is frosty and well-chilled.

4

Prepare serving glass

If you chilled the glass earlier with freezer cold, discard that ice. Fill the serving glass with approximately 1 cup of crushed ice.

5

Strain

Double-strain the shaken cocktail over the crushed ice in the prepared glass to remove fine ice shards and any pulp.

6

Finish

Top with a final light dash of Angostura bitters (optional) and, if you like, an extra faint drizzle of coconut cream for a layered look.

Garnish

7

Garnish with a lime wheel on the rim and tuck a pineapple leaf or small wedge into the ice. For aroma and a decorative touch, grate a pinch (about 1 tsp) of nutmeg over the top or sprinkle a teaspoon of toasted coconut across the foam/ice.
