Preparation — Milk Wash (clarifying step)

Combine base with milk

In a small pitcher or jar, combine the gin, white vermouth, elderflower liqueur, clear rum, and the 1/4 cup whole milk. Stir gently to combine. The milk will start to curdle slightly when acids are later added; this is normal and produces a bright, silky clarified base.

Cover and let the mixture rest at room temperature for 10 minutes while you prepare the rest of the cocktail components. The milk will not fully separate yet; the next steps cause curdling and clarification.

Mixing the Cocktail

Dry shake

In a cocktail shaker, add the fresh lemon juice, fresh lime juice, simple syrup, egg white, and the 2 tablespoons cold water. Do a vigorous dry shake (shake without ice) for 20–30 seconds until frothy and the egg white has emulsified.

Acid addition to milk wash

Pour the shaken citrus, syrup, and egg-white mixture into the pitcher containing the spirits and milk. Stir gently to combine; you will see the milk curdle and the mixture begin to separate into curds and a clear-looking liquid. Let it sit for 1–2 minutes to complete curdling.

Clarify

Strain the curdled mixture through a fine-mesh strainer lined with two layers of cheesecloth or a paper coffee filter into a clean container. This may take several minutes as the liquid slowly filters through. The liquid collected will be a pale, slightly opalescent clarified spirit with soft texture.

Finish & Serve

Chill a coupe or Nick & Nora glass in the freezer or fill with ice water to cool while you work. If desired, briefly taste the clarified liquid and adjust balance with a few drops more lemon or a tiny splash (1/4 tsp) of simple syrup—adjust sparingly since flavors concentrate after clarification.

Pour the clarified mixture (about 3 ounces expected) into the chilled glass using a fine sieve for one last catch of any stray curds. The resulting cocktail should be silky, slightly cloudy-white and fragrant with floral elderflower and bright citrus.

Express the lemon twist over the drink by twisting the peel over the surface to release oils, then rub the rim and drop it into the drink. Optionally float an edible flower or a small micro-herb sprig as a garnish.
