Clean mussels

Rinse mussels under cold running water. Discard any mussels with cracked shells or that do not close when tapped. Use a small paring knife to remove beards (fibrous threads) and scrub shells if needed. Keep cold until ready to cook.

Sweat aromatics

In a large wide saucepan or Dutch oven over medium heat, add 1 tablespoon unsalted butter and 1 tablespoon olive oil. Once butter melts and is shimmering, add the minced shallot and sliced garlic. Cook, stirring, until softened and aromatic, about 2–3 minutes; do not let garlic brown.

Deglaze and build broth

Increase heat to medium-high. Pour in 1 cup dry white wine and 1/4 cup chicken or seafood stock (if using). Add the thyme sprigs and bring the liquid to a gentle boil for 2 minutes to burn off alcohol and concentrate flavor.

Steam mussels

Add the cleaned mussels to the pot, cover with a tight-fitting lid, and shake the pot once to distribute mussels. Steam for 4–6 minutes, checking at 4 minutes: most mussels should be open. Continue until all (or nearly all) have opened. Discard any mussels that remain tightly closed.

Finish with cream & butter

Remove the pot from heat. Using a slotted spoon or tongs, transfer mussels to a warmed bowl and cover to keep warm. Return the pot with cooking liquid to low heat. Remove and discard thyme sprigs. Stir in 2 tablespoons unsalted butter and 1/4 cup heavy cream. Simmer gently for 1–2 minutes until sauce is slightly thickened and glossy. Season with 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper, and the zest and juice of half a lemon to taste.

Add herbs

Stir in 2 tablespoons chopped flat-leaf parsley and 1 tablespoon chopped chives (if using). Pour the sauce over the mussels or return mussels to the pot and toss gently to coat.

Serve

Transfer mussels and sauce to a serving bowl. Garnish with a few extra parsley leaves and a light drizzle of olive oil if desired. Serve immediately with grilled buttered baguette to soak up the sauce.

Grilled Buttered Baguette

Prep bread and butter: Slice half a baguette on a sharp diagonal into 6–8 slices about 3/4" thick. Spread each slice lightly with the 2 tablespoons softened unsalted butter. If you prefer, mix the butter with a pinch of chopped parsley and a little lemon zest for extra flavor.

Grill or pan-fry: Heat a grill pan or skillet over medium-high heat and brush with 1 teaspoon olive oil. Place buttered baguette slices buttered-side down and grill 1–2 minutes until golden and crisp. Flip and toast the second side 30–60 seconds until just crisp. Alternatively, grill on an outdoor grill for 30–60 seconds per side.

Garlic rub and finish: Remove to a plate and, while still warm, rub the top of each slice with the cut side of 1 garlic clove for a fragrant finish. Sprinkle lightly with 1/4 teaspoon coarse sea salt. Serve immediately alongside the mussels.
