Honey syrup (make ahead)
Combine and dissolve
In a small bowl or jar, combine Barr Hill honey and warm water in a 2:1 ratio (4 tbsp honey to 2 tbsp warm water). Stir vigorously until the honey is fully dissolved and the mixture is smooth. Let cool to room temperature. Store refrigerated in a sealed container for up to 2 weeks.
Cocktail assembly
Measure
Measure 2 oz Barr Hill Gin, 0.75 oz fresh lemon juice, and 0.75 oz of the prepared Barr Hill honey syrup.
Shake with ice
Add 6 ice cubes to the shaker (enough to fill ~2/3 of the shaker). Seal and shake hard for 12–15 seconds until the shaker is well chilled and slightly frosted on the outside.
Strain
Discard ice or water from your chilled glass. Double-strain the cocktail through a Hawthorne strainer and fine mesh strainer into the chilled coupe or martini glass to remove ice shards and any pulp.
