Yogurt Base

Sweeten and flavor yogurt
Place the 3 cups of vanilla yogurt in a mixing bowl. Stir in 1–2 tablespoons honey or maple syrup if you prefer sweeter yogurt and 1 teaspoon vanilla extract if you want extra vanilla flavor. Taste and adjust sweetness. Cover and chill while you prepare other components.
Berry Compote

Cook compote
Combine 2 cups mixed berries, 2 tablespoons sugar, 2 tablespoons water and 1 teaspoon lemon juice in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer. Cook, stirring occasionally, until berries soften and release juices, about 5–7 minutes.

Thicken compote (optional)
If you want a thicker compote, mix 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Stir the slurry into the simmering berries and cook another 1 minute until the sauce thickens. Remove from heat and let cool to room temperature; the compote will continue to thicken as it cools.
Homemade Granola

Prepare granola mixture
Preheat oven to 325°F (160°C). In a large bowl combine 2 cups rolled oats, 1 cup chopped nuts, 1/2 cup shredded coconut (if using), 1/4 cup seeds, 1 teaspoon cinnamon and 1/4 teaspoon salt. Stir to combine.

Sweeten and bake
In a small bowl whisk together 3 tablespoons maple syrup (or honey) and 2 tablespoons neutral oil. Pour the liquid over the oat mixture and toss until evenly coated. Spread the mixture in an even layer on a rimmed baking sheet lined with parchment paper.

Bake and cool
Bake for 18–22 minutes, stirring once halfway through to ensure even browning, until golden and fragrant. Watch closely at the end to prevent burning. Remove from oven and let granola cool completely on the sheet — it will crisp as it cools. Break into clusters.
Fresh Berries & Assembly

Prepare fresh berries
Rinse all fresh berries and drain well. Hull and quarter strawberries if large. Set aside a few whole berries for garnish.

Layer parfaits
For 4 servings, use 4 clear glasses or bowls. Start with about 1/4 cup yogurt in each glass, then add 2 tablespoons compote, followed by 3 tablespoons granola and a tablespoon mixed fresh berries. Repeat to make two layers or continue until glasses are filled, finishing with a spoonful of compote, a sprinkle of granola and a few fresh berries on top. Garnish with a small mint leaf if desired.

Serve
Serve immediately to keep granola crunchy, or refrigerate assembled parfaits for up to 2 hours (granola will soften). Store leftover compote in an airtight container in the refrigerator for up to 5 days and granola at room temperature for up to 2 weeks.
