Cocktail

  1. 1

    Prepare glass

Fill a highball glass with large ice cubes to chill the glass while you build the drink.

  2. 2

In a mixing glass or tall stirring vessel, pour 2 oz whiskey, 0.75 oz Aperol, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup.

  3. 3

Add 2 dashes of Angostura bitters to the mixing vessel.

  4. 4

Stir the mixture with ice for about 10–15 seconds to chill and slightly dilute (you want it integrated but not overly watery).

  5. 5

Discard the water from the chilled highball glass if any accumulated, then add fresh large ice cubes (4 pieces) to the glass.

  6. 6

Strain the stirred whiskey-Aperol mixture into the ice-filled highball glass.

  7. 7

Top gently with about 3 oz chilled club soda; pour slowly over the back of a spoon or down the side of the glass to preserve effervescence and a layered look.

  8. 8

Give the drink one gentle stir (1–2 rotations) to marry the soda with the base mix without flattening the bubbles.

  9. 9

Garnish with a lemon wheel or express a lemon peel over the glass to release oils and drop it in. Serve immediately.
