Overnight oats base

    Combine base ingredients

    In a medium bowl or a 1‑liter jar, whisk together 1 cup steel-cut oats, 360 ml canned coconut milk, 120 ml plant-based yogurt, 2 tbs maple syrup, 1 tsp vanilla extract, 1/2 tsp ground cinnamon and 1/4 tsp salt until evenly combined.

    Portion and rest

    Cover the bowl or seal the jar and refrigerate at least 8 hours or preferably 10–12 hours. Note: steel-cut oats will soften but retain a firmer, chewy texture compared with rolled oats; longer chilling yields more tender oats.

Almond crumble

    Prepare crumble mix

    Preheat oven to 175°C (350°F). In a small bowl, stir together 1/2 cup rolled oats, 1/2 cup roughly chopped raw almonds, 1 tbs melted coconut oil, 1 tbs maple syrup, 1/4 tsp ground cinnamon and 1/8 tsp salt until the dry ingredients are evenly coated.

    Bake until crisp

    Spread the mixture in a thin layer on a small baking sheet lined with parchment. Bake for 8–12 minutes, gently tossing once halfway through, until golden and fragrant. Watch closely the last few minutes to avoid burning. Remove from oven and let cool—crumble further with a spatula once cooled.

Toasted coconut topping

    Toast coconut

    While crumble bakes (or in a small skillet), spread 1/4 cup shredded coconut in a single layer on a small baking sheet or skillet. If using, drizzle 1 tsp maple syrup and toss to coat lightly. Toast in the oven alongside the crumble for 3–6 minutes, stirring once, or toast in a dry skillet over medium heat for 2–4 minutes until edges are golden. Remove and cool.

Finish & serve

    Assemble

    Stir the chilled steel-cut oats once to loosen. If mixture is very thick, stir in up to 2 tbs extra coconut milk to reach desired consistency. Divide oats between 2 bowls or jars (serves 2).

    Sprinkle a generous spoonful of almond crumble over each portion, then add toasted coconut. Garnish with 2 tbs sliced almonds and 1/2 cup fresh berries or banana slices divided between the servings.

    Storage & reheating

    Stored covered in the refrigerator, the overnight oats keep 3–4 days; keep crumble separate to preserve crunch. To enjoy warm, microwave a single serving 60–90 seconds, then add crumble and toasted coconut.
