Toast or English Muffin Base

Optional Toppings — Spreadable

Method

Toast or English Muffin Base

  1. 1

    Prepare the bread and muffin

If using sliced bread, choose two slices. If using an English muffin, split it in half with a fork or knife to expose the nooks and crannies.

  2. 2

    Preheat the toaster or pan

For toaster: set to medium (about 2–3 on many toasters). For stovetop/ skillet: heat a nonstick skillet over medium heat for 1–2 minutes and add 1 tsp olive oil or a small pat of butter to the pan.

  3. 3

    Toast until golden

Toaster: toast bread or English muffin halves until golden and crisp to your liking (about 2–4 minutes). Stovetop: place bread or muffin halves cut-side down in the hot skillet and toast 1–3 minutes until golden and crisp, then flip briefly if you want both sides toasted. For an oven broiler: place on a baking sheet about 4–6 inches from the heat and broil 1–2 minutes per side, watching closely.

  4. 4

    Season the hot surface

Immediately after toasting, spread 1 tbs butter on the warm toast or muffin halves so it melts in. If you prefer olive oil, brush or drizzle 1 tsp olive oil instead. Lightly sprinkle 1/8–1/4 tsp salt and a pinch of black pepper if using for savory preparations.

Optional Toppings — Spreadable

  1. 5

Jam or marmalade: spread 1–2 tsp onto a warm slice or muffin half. Adjust sweetness to taste.

  2. 6

Peanut or nut butter: spread 1 tbs onto the warm toast. For smoother texture, warm the nut butter slightly before spreading if desired.

  3. 7

Cream cheese: spread 1 tbs onto the warm muffin or toast. Top with a drizzle of honey (1 tsp) for a sweet-savory combo.

  4. 8

Avocado smash: scoop 1/2 an avocado into a small bowl, mash with a fork, season with a pinch of salt and pepper, then spread onto toast (about 1 tbs per half). Finish with a squeeze of lemon if available.

Optional Toppings — Savory

  1. 9

    Fried or sunny-side egg

Heat a small nonstick skillet over medium-low and add 1 tsp butter or oil. Crack 1 egg into the skillet and cook until whites are set but yolk is still runny, about 2–3 minutes for sunny-side up. For over-easy, flip and cook 10–20 seconds more. Season with a pinch of salt and pepper, then place the egg on the toasted bread or muffin half.

  2. 10

    Poached egg

Bring a saucepan of water to a gentle simmer and add a splash of vinegar (optional). Crack 1 egg into a small bowl, swirl the water, and slide the egg in. Poach 3–4 minutes for a runny yolk. Remove with a slotted spoon, drain briefly, and place on toast.

  3. 11

    Scrambled egg

Whisk 1 egg with a pinch of salt. Melt 1 tsp butter in a skillet over medium-low, add the egg, and gently fold until softly set, about 1–2 minutes. Spoon onto toast.

  4. 12

    Assemble savory

Place cheese slice on a hot toast if you want it slightly melted, then top with egg, tomato slices, cooked bacon or ham, and finish with microgreens or herbs (about 1 tbs). Season with additional salt and pepper to taste.

Finishing and Serving

  1. 13

Combine your chosen spreads and toppings on the toasted bread or muffin halves. Serve immediately while warm for best texture and flavor.

  2. 14

Leftovers: store unused toasted bread or muffins in an airtight container for up to 24 hours; re-toast or warm in a skillet/oven before serving to restore crispness.
