Sweet Potato Fries

Preheat and prepare
Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper or lightly grease them to prevent sticking.

Cut fries
Peel the sweet potatoes if desired. Cut into 1/3- to 1/2-inch thick fry shapes (aim for even thickness so they cook uniformly). Place cut fries into a large bowl of cold water and soak for 10 minutes to remove excess starch; this helps them crisp.

Dry and toss
Drain the soaked fries and pat thoroughly dry with clean kitchen towels or paper towels. In a large bowl, combine the dried sweet potato fries with cornstarch and toss until lightly dusted. Add olive oil, smoked paprika, garlic powder, sea salt, and black pepper; toss until evenly coated.

Arrange for baking
Spread the fries in a single layer across the prepared baking sheets, making sure pieces aren't touching or overcrowded (use two sheets if necessary). Overcrowding causes steaming and soft fries.

Bake and flip
Bake for 20 minutes, then remove sheets and flip fries with a spatula to promote even browning. Rotate the pans between racks if using both. Bake an additional 10–15 minutes until edges are browned and fries are crisp. Total bake time will be about 30–35 minutes depending on thickness and oven.

Finish
If you want extra crispness, broil on high for 1–2 minutes while watching closely to avoid burning. Remove from oven and immediately sprinkle chopped parsley (if using) and a light additional pinch of salt. Let cool 2–3 minutes before serving so they firm up slightly.
Pommery Mayo (Mustard Mayonnaise)

Combine mayonnaise, Pommery whole-grain mustard, lemon juice, honey, and grated garlic in a small bowl. Whisk until smooth and homogenous.

Taste and season with salt and black pepper. Adjust acidity or sweetness to preference by adding a little more lemon juice or honey, if desired.

Cover and chill in the refrigerator for at least 15 minutes to let flavors meld. Serve alongside warm sweet potato fries as a dipping sauce.
