Assorted Sweet Bites (yields ~24 pieces total)
Method
Base Components (shortbread squares, mini brownies, mini cheesecakes)

Shortbread squares — dough and bake
Preheat oven to 350°F (175°C). In a mixing bowl, cream 1 cup (2 sticks) unsalted butter (from the ingredient list above) with 1/2 cup granulated sugar until light and fluffy (about 3–4 minutes). Add 1 tsp vanilla extract and 1 egg; mix until incorporated. In a separate bowl whisk together 2 cups all-purpose flour and 1/2 tsp kosher salt. Gradually add dry ingredients to the butter mixture until a soft dough forms. Press dough evenly into a 9x13-inch parchment-lined baking pan. Dock the surface lightly with a fork and sprinkle with 2 tbsp chopped toasted almonds. Bake 20–25 minutes until pale golden at edges. Cool completely in pan, then cut into 12 small squares.

Mini brownies — batter and bake
Lower oven temperature to 325°F (160°C). Melt 6 oz dark chocolate with 1/2 cup (1 stick) unsalted butter in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth. Whisk together 3/4 cup granulated sugar, 1/4 cup brown sugar and 2 eggs until combined. Stir in the melted chocolate mixture and 1 tsp vanilla. Sift together 3/4 cup all-purpose flour, 1/2 cup cocoa powder and 1/4 tsp baking powder; fold into the wet ingredients just until combined. Pour into a greased 8x8-inch pan and bake 20–25 minutes until a toothpick shows moist crumbs. Cool completely and cut into 8–10 bite-size squares.

Mini cheesecakes — crust, filling, and bake
Reduce oven to 325°F (160°C) if needed. Make a simple crust by pulsing 3/4 cup toasted almond crumbs with 2 tbsp brown sugar and 2 tbsp melted butter until clumps form. Press about 1 tbsp crust into each cavity of a 12-cup muffin tin lined with paper liners. For the filling, beat 8 oz cream cheese with 1/2 cup confectioners' sugar until smooth, then add 1 egg, 1/2 tsp vanilla and 1 tsp lemon zest; beat until silky. Divide filling among the 12 muffin cups over the crust. Bake 15–18 minutes until centers are almost set. Cool to room temp, then chill at least 2 hours. Remove from liners and refrigerate until assembly.
Finishing Components (ganaches, glazes, and garnishes)

Dark chocolate ganache
Place 6 oz chopped dark chocolate in a heatproof bowl. Heat 1/2 cup heavy cream to just simmering, then pour over chocolate. Let sit 1 minute, then whisk until smooth and glossy. Stir in 1 tbsp unsalted butter if gloss desired. Allow to cool slightly to a spreadable consistency (about 10 minutes).

White chocolate glaze
Place 6 oz white chocolate in a bowl. Heat 1/2 cup heavy cream until hot (not boiling) and pour over chocolate. Let sit 1 minute, whisk to combine until smooth. To thin, add 1–2 tsp warm cream. Keep warm over a double boiler if needed for pouring or dipping.

Quick berry gel (for topping)
Sprinkle 2 tsp powdered gelatin over 2 tbsp cold water; let bloom 3–5 minutes. Warm 3/4 cup mashed mixed berries with 2 tbsp sugar until steaming. Remove from heat and whisk in bloomed gelatin until dissolved. Cool slightly until syrupy; spoon 1 tsp onto chilled mini cheesecakes or shortbread squares as a shiny topping.

Salted caramel drizzle and assembly
Warm 1/2 cup salted caramel sauce until pourable. For each shortbread square: brush a thin layer of dark chocolate ganache on top, chill 5 minutes to set, then drizzle with caramel and sprinkle with a few cocoa nibs or chopped toasted almonds. For brownies: dip half of each brownie bite into dark chocolate ganache and place on parchment to set; once set, drizzle white chocolate glaze over the opposite corner and top with a raspberry or sprinkle of powdered sugar. For mini cheesecakes: spoon 1 tsp berry gel onto each cheesecake, pipe a small rosette of whipped cream if desired (optional: whip remaining 1/2 cup heavy cream with 1 tbsp confectioners' sugar to soft peaks) and garnish with a single blueberry or raspberry.
Packaging and Serving

Arrange the assortment on a serving board or platter: 8–10 brownies, 12 shortbread squares, and 12 mini cheesecakes (total yields ~32 pieces — adjust counts by cutting sizes as desired). Keep chilled until 10 minutes before serving for best texture. Store leftovers refrigerated in an airtight container up to 4 days. Bring chilled cheesecakes to room temperature 10–15 minutes before serving for optimal flavor.
