Measure and have all liquid ingredients at hand: soju, pineapple juice, Pernod, ginger beer, lime juice, and optional simple syrup.

Add base and modifiers
Pour 3 oz soju, 2 oz pineapple juice, 0.25 oz Pernod, 0.5 oz fresh lime juice, and 0.25 oz simple syrup (if using) directly into the glass over the ice.

Top with ginger beer
Gently stir once or twice to combine the ingredients, then top with 3 oz cold Propeller ginger beer (or a similar spicy ginger beer). Stir very gently to preserve the fizz and ensure everything is integrated.

Garnish the drink with a pineapple wedge and a lime wheel on the rim. Optionally slap a mint sprig between your palms to release the aroma and tuck it into the glass for a fresh herbal note.

Serve immediately with a straw. Recommend tasting and adjusting: if you prefer sweeter, add another 0.25 oz simple syrup; for more anise-forward Pernod presence, float an additional 0.1β0.2 oz on top.
