Matcha Paste

Method

Matcha Paste

  1. 1

    Sift matcha

Sift 2 tsp matcha powder into a small bowl to remove clumps. This helps create a smooth paste.

  2. 2

    Add hot water

Pour 2 tablespoons of hot water (about 80°C / 175°F) over the sifted matcha.

  3. 3

    Whisk into paste

Using a bamboo matcha whisk (chasen) or a small frother, whisk vigorously in an M or zig-zag motion until a smooth, frothy paste forms and no dry powder remains (about 15–30 seconds).

  4. 4

    Sweeten (optional)

If you prefer your latte sweetened in the paste, stir in 1 tsp of honey, agave, or simple syrup now until dissolved.

Milk

  1. 5

    Heat milk

In a small saucepan, gently heat 1 cup milk over medium-low heat until steaming and small bubbles form around the edges (do not boil), about 3–4 minutes. If using a microwave, heat for 1–1.5 minutes until hot but not boiling.

  2. 6

    Froth milk

Froth the hot milk using a milk frother, handheld electric whisk, or by vigorously shaking in a heatproof jar with lid for 20–30 seconds to create microfoam.

  3. 7

    Add vanilla and sweetener (optional)

If desired, stir 1 tsp vanilla extract and 1 tsp sweetener into the hot milk until combined.

Assemble & Serve

  1. 8

Pour the prepared matcha paste into your serving cup.

  2. 9

Slowly pour the steamed, frothed milk over the matcha while holding back foam with a spoon, then spoon the foam on top.

  3. 10

Garnish with a light dusting (about 1/4 tsp) of matcha powder or a dollop (about 2 tbsp) of whipped cream if desired.

  4. 11

Serve immediately. Stir before drinking to fully combine the matcha and milk.
