    Combine and heat

    In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Add 2 tablespoons dried culinary lavender. Stir to combine.

    Bring the mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Once it reaches a simmer, reduce heat to low and let steep for 5 minutes — do not boil vigorously to preserve the lavender aroma.

    Remove from heat and let the syrup steep off the heat for an additional 10 minutes to infuse more lavender flavor. Taste after 10 minutes; if it's too floral, remove the lavender sooner.

    Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing gently on the solids to extract syrup but not the bitter notes. Discard solids. Cool to room temperature, then refrigerate until chilled. Yields about 1 to 1 1/4 cups; keeps in the fridge for up to 2 weeks.

Blueberry Puree

    Cook (if using frozen) and puree

    Place 1 cup fresh or frozen blueberries in a small saucepan with 1 tablespoon fresh lemon juice and 2 teaspoons cold water. If using frozen, warm gently over low heat until just thawed and soft (about 2–3 minutes). If using fresh, you can proceed without heating, but warming helps release juices.

    Transfer the blueberries to a blender or use an immersion blender. Purée until smooth. Taste and adjust acidity with a few more drops of lemon juice if needed.

    Optional: For a smoother cocktail, pass the purée through a fine mesh sieve, pressing with a spoon to extract roughly 3/4 cup of strained purée and discarding seeds/skins.

Cocktail Assembly

    Fill a cocktail shaker halfway with ice (about 1 cup). Add 2 oz gin, 0.5 oz chilled lavender simple syrup, 0.75 oz blueberry purée, and 0.5 oz fresh lemon juice.

    Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted. This both chills and slightly aerates the blueberry.

    Double-strain the mixture into a chilled coupe or rocks glass filled with fresh ice (use a fine mesh strainer to remove small solids for a smoother drink).
