1. Heat water
Bring fresh cold water to a near-boil (about 95°C / 203°F). If you don’t have a thermometer, bring to a rolling boil and remove from heat for 30 seconds.
2. Prepare chamomile
Place 2 teaspoons of dried chamomile flowers into a tea infuser, tea ball, or directly into a teapot or cup if you plan to strain.
3. Steep
Pour 240 ml (1 cup) of the hot water over the chamomile. Cover the cup or teapot to keep the volatile oils from escaping and steep for 5 to 7 minutes for a full, soothing flavor. Steep 3–5 minutes for a lighter cup; up to 7 minutes for more body.
4. Strain
Remove the infuser or strain the tea into a cup to separate the flowers from the liquid. Pressing the flowers is not necessary and can make the tea bitter.
Optional additions
5. Sweeten
Stir in 1 teaspoon of honey while the tea is still warm, adjusting to taste. Honey dissolves best in warm liquid.
6. Citrus
Squeeze a wedge of fresh lemon into the cup if desired. Add a small amount at first and taste — lemon brightens chamomile but too much will overwhelm the delicate floral notes.
7. Herbal note
If using, bruise 2 fresh mint leaves by gently clapping them between your fingers to release oils, then add to the cup as a garnish or for a mild minty aroma.
