Method
Preparation
- 1
Heat water and prepare filter
Bring the total water (about 350 ml) to a near boil (~94–96°C). Place the paper filter in the dripper and rinse it with the hot water to remove paper taste and preheat the dripper and server/mug. Discard rinse water.
- 2
Grind coffee
Weigh 20 g of coffee beans. Grind to a medium-coarse grind (similar to granulated sugar) appropriate for your dripper. Transfer grounds to the rinsed filter.
Brewing
- 3
Bloom
Start the timer. Pour 50 ml of hot water evenly over the grounds to saturate them (this uses the reserved 50 ml). Allow coffee to bloom for 30–45 seconds to release gases.
- 4
Pour in stages
After bloom, pour additional water in slow, concentric circles, avoiding pouring directly on the filter paper. Pour to reach about 150 ml by 1:30, then continue to 300 ml by 2:30–3:00. Total brew time should be 2:30–3:30 minutes depending on grind and dripper. If extraction seems slow, make a slightly coarser grind next time; if too fast, grind finer.
- 5
Agitate and settle
Optional: gently swirl or stir the slurry once after the second pour to ensure even extraction. Allow all water to drain through the grounds completely.
