Prosecco-inspired Sparkling Base

    Chill and prepare base

    Place the bottle of sparkling wine and the club soda in the refrigerator for at least 2 hours so both are well chilled. Chill the carafe or pitcher briefly in the fridge or by filling with ice water for 10 minutes, then discard the ice water.

    When ready to assemble, gently pour the chilled sparkling wine into the chilled pitcher. Use a slow tilt and pour to preserve effervescence. Add the cold club soda to give a lighter, slightly softer mouthfeel—pour gently to retain bubbles.

Fruit & Aromatic Components

    Combine fruit juices and aromatics

    In a measuring cup or small bowl, combine the white grape juice (120 ml), pear nectar (60 ml), fresh lemon juice (15 ml), elderflower liqueur (15 ml, optional), and sugar syrup (10 ml). Stir until the syrup is fully incorporated.

    Taste the mixture for balance: it should be bright and slightly sweet with floral notes. Adjust with up to 5–10 ml more simple syrup if you prefer it sweeter, or an extra 5 ml lemon juice if it needs more acidity.

    Slowly add the juice-aromatic mixture to the sparkling wine and club soda in the pitcher. Pour down the side of the pitcher or over a bar spoon to minimize bubble loss and preserve a lively effervescence. Stir once gently with a bar spoon to distribute evenly—avoid vigorous stirring.

    Chill flutes or wine glasses for at least 10 minutes. If desired, place a few ice cubes in each glass to chill briefly then discard before pouring to prevent dilution.

    Cut thin pear slices and thread one onto the rim of each glass or float a slice in the pitcher for a table display. Add a green grape or two on a cocktail pick for an elegant touch. Add a small mint sprig or an edible flower beside the pear slice for aroma.
