    Prepare glass rims

    Pour coarse salt onto a small plate. Run a lime wedge around the rim of two rocks or coupe glasses, then dip rims into the salt so they are evenly coated. Set glasses aside.

    Combine and chill

    Fill a cocktail shaker half full with ice cubes. Add 4 fl oz tequila, 2 fl oz fresh lime juice, 1 fl oz orange liqueur, and 0.5 fl oz simple syrup to the shaker.

    Shake

    Seal the shaker and shake vigorously for 12–15 seconds, until the shaker is well chilled and slightly frosted.

    Strain and serve

    Fill the prepared glasses with fresh ice (if desired). Double-strain the margarita into the glasses using a Hawthorne or fine mesh strainer to remove any ice shards. Garnish each with a lime wheel or wedge. Serve immediately.

Mojito Mocktail (serves 2)

    Muddle mint and lime

    Divide 20 mint leaves between two collins or highball glasses. Add 2 pieces of lime wedge (reserve one lime wedge per glass for garnish) and 1 fl oz simple syrup. Using a muddler or the back of a spoon, gently press the mint and lime to release the oils and juice — avoid shredding the mint into small bits.

    Add ice and soda

    Fill the glasses about two-thirds with crushed ice or cubes (about 8 cubes each total divided between glasses). Pour 1 fl oz fresh lime juice into the glasses (divide evenly) if you haven't already added full lime amount while muddling. Top each glass with about 5 fl oz club soda or sparkling water, gently stir once to combine and lift the mint leaves through the drink.

    Garnish and serve

    Garnish each glass with a sprig of mint and a lime wedge. Serve with a straw so the drink can be lightly stirred between sips.
