Prepare

Chill a coupe or Nick & Nora glass by filling it with ice and setting aside. If using an egg white, separate and keep refrigerated until ready to use.

Dry shake

Add the whiskey, fresh lemon juice, simple syrup, egg white, Aperol, and orange bitters to a cocktail shaker. Do not add ice yet. Seal the shaker and 'dry shake' vigorously for 15–20 seconds to emulsify the egg white and create a silky foam.

Wet shake

Open the shaker, add a large handful of ice (about 4–6 large cubes). Seal and shake vigorously for another 12–15 seconds until the shaker is very cold to the touch and properly diluted.

Strain

Dump ice from the chilled glass. Double-strain the cocktail through a Hawthorne strainer and fine mesh strainer into the chilled glass to remove ice shards and ensure a smooth texture.

Garnish and finish

Carefully drop 1 dash of Angostura bitters onto the foam. Use a toothpick or cocktail pick to create a simple design if desired. Express a lemon peel over the drink to release its oils, rub the peel around the rim, and drop it into the drink or rest it on the rim as a garnish.
