Course 1 — Amuse-Bouche: Citrus Salmon Bites

Course 1 — Amuse-Bouche: Citrus Salmon Bites

Prepare salmon tartare

Keep the salmon very cold. Finely dice the sushi-grade salmon to small uniform pieces. Place in a bowl and add lime juice, soy sauce, sesame oil, toasted sesame seeds, salt and pepper. Gently fold in microgreens or minced chives. Taste and adjust acid or salt very slightly — tartare should be bright and balanced.

Portion onto carriers: Spoon roughly 3/4 tablespoon of the salmon mixture onto each cucumber slice, blini, or cracker (makes about 12–16 small bites). Garnish each with an additional tiny microgreen or a pinch of sesame seeds. Keep chilled until serving and serve immediately so the cucumber/cracker stays crisp.

Course 2 — Soup: Roasted Cauliflower & Apple Soup (small cups)

Roast cauliflower and soften apple

Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tbs olive oil and a light pinch of salt on a baking sheet. Roast 18–22 minutes until golden and caramelized at edges. In the last 8 minutes, scatter diced apple on the sheet to roast briefly so it softens but doesn’t fully collapse.

Sauté aromatics and simmer

While roasting, warm a small saucepan over medium heat. Add a teaspoon olive oil (or the same from earlier), sauté the diced onion until translucent, about 4 minutes. Add smashed garlic and sauté 30 seconds more. Add the roasted cauliflower and apple to the pan, pour in the stock, bring to a gentle simmer and cook 6–8 minutes to marry flavors.

Blend and finish

Remove from heat. Use an immersion blender (or transfer carefully to a blender in batches) and puree until smooth. Return to low heat, stir in cream, lemon juice, salt and pepper. Warm through but do not boil. Adjust seasoning. Ladle a small 1/4–1/3 cup tasting portion into demitasse cups and garnish with a pinch of chopped chives.

Course 3 — Main Bite: Seared Chicken with Mushroom Ragout (single portion tasting)

Prepare chicken

Pat the chicken breast dry and, if thick, butterfly or gently pound to an even ~3/4" thickness so it cooks quickly and evenly. Season both sides with 1/4 tsp salt and 1/8 tsp pepper.

Sear chicken

Heat a small skillet over medium-high heat. Add 1 tsp olive oil and 1 tsp butter. When foaming subsides, add the chicken and sear 2–3 minutes per side until golden and an instant-read thermometer reads 155–160°F (it will rise slightly while resting). Remove to a plate and tent loosely with foil to rest 5 minutes.

Make mushroom ragout

In the same skillet, reduce heat to medium and add the sliced mushrooms. Add a light pinch of salt to draw out moisture. Sauté until mushrooms are browned, about 3–4 minutes. Add the minced shallot and garlic and cook 30–45 seconds until fragrant. Deglaze with 1 tbs white wine (or a splash more stock), scraping up browned bits. Add 1/4 cup chicken stock and thyme, simmer 2–3 minutes to reduce slightly. Stir in 1 tbs cream, adjust seasoning with remaining salt and pepper. Spoon a small mound (about 2–3 tbs) of ragout onto the tasting plate.

Assemble and finish: Slice the rested chicken thinly (2–3 small slices) and arrange over the ragout. Spoon any resting juices over the chicken and garnish with chopped parsley. Serve immediately so the chicken remains warm.

Course 4 — Dessert: Mini Chocolate Panna Cotta with Berries

Bloom gelatin and heat dairy

Sprinkle 1/2 tsp gelatin over 1 tbs cold water in a small bowl; let bloom 3–5 minutes. In a small saucepan, combine heavy cream, milk, and sugar and warm over medium heat until very hot but not boiling (bubbles at edges). Remove from heat and stir in chopped dark chocolate until melted and smooth.

Finish and set

Whisk in vanilla extract and the bloomed gelatin until fully dissolved. Stir in orange zest if using. Pour into two 2–3 oz mini molds or small glasses to create two tasting portions (a single table portion may be divided among guests). Chill in the refrigerator at least 2 hours or until set (can be made ahead).

Serve: Unmold if desired (dip bases briefly in warm water and invert) or serve in the glasses. Top each panna cotta with 1 tbs mixed berries and a light dusting of grated chocolate or extra zest. Serve chilled.

Table-Wide Extras / Serving

Timing & flow: This tasting is intended for whole-table participation. Serve Course 1 chilled and quickly, then present Course 2 warm in small cups. Course 3 should be served immediately after plating to maintain warmth. Dessert can be plated or pre-chilled and brought to the table. Offer lemon/lime wedges, finishing oil and cracked pepper at the table so guests can adjust seasoning to taste.

Portioning note: The ingredient quantities above are scaled for a single table tasting for 4 guests (four courses, appropriately portioned). Adjust quantities proportionally for larger or smaller tables. Ensure all items that require chilling or setting (salmon, panna cotta) remain refrigerated until service; soups and mains should be held warm but not overcooked.
