Prep the shiso
Pick 4 shiso leaves and set them aside for garnish. From the remaining 2 leaves, discard the stems, stack them, roll tightly and finely chiffonade (thinly slice). Place the chiffonade in the palm of one hand and clap once or press lightly with a spoon to release aroma and oils—this will brighten the herb without bruising it excessively.
Muddle & build
In a mixing glass or shaker, add the bourbon, aged rum, orgeat, fresh lemon juice, and the chiffonaded shiso leaves. Gently muddle the shiso with the liquid ingredients about 4–6 times — enough to release aroma but not to shred into pieces. Add the 2 dashes of Angostura bitters.
Shake
Add a large handful of ice to the shaker (enough to fill it about two-thirds). Shake vigorously for 10–12 seconds until the outside of the shaker feels well chilled and slightly frosted.
Strain
Double-strain the mixture through a fine-mesh strainer (and a Hawthorne or julep strainer if available) into a chilled old-fashioned glass containing 2–3 large ice cubes. Double-straining removes small shiso fragments for a silky texture.
Top with tonic & finish
Gently float 2 oz chilled tonic water over the back of a bar spoon onto the drink to preserve effervescence and a layered mouthfeel. Do not stir vigorously; just one gentle swirl or two with the spoon if needed to integrate slightly.
Garnish
Express an orange or lemon twist over the surface by pinching it skin-side down to release oils, then rim the glass with the twist and drop it in. Lay the reserved 4 whole shiso leaves on top of the drink or tuck one against the ice as garnish. Optionally, add one small dash of bitters on the tonic surface (it will bead and create aromatic contrast).
Serve
Serve immediately while the tonic is fizzy. Encourage the drinker to inhale the shiso aroma before sipping to appreciate the interplay of bourbon, rum, orgeat, and herbal citrus notes.
