Preparation

Chill glass

Place a coupe or rocks glass in the freezer or fill it with ice and water to chill while you prepare the cocktail.

Measure ingredients

Using a jigger, measure the overproof rum, gin, applejack, dry curaçao, sherry, orgeat, and lemon juice. If you prefer a slightly sweeter drink, have the optional 1/4 oz simple syrup ready.

Mixing

Dry shake (optional)

If you want a silkier texture, add all liquid ingredients (including orgeat) to a cocktail shaker without ice and shake vigorously for 8–10 seconds to emulsify the orgeat.

Shake with ice

Add plenty of ice to the shaker (enough to chill quickly). Shake vigorously for 12–15 seconds until the exterior of the shaker is cold and well diluted — overproof rum benefits from good dilution.

Fine strain

Discard the chilling ice from your glass. Double-strain the cocktail into the chilled coupe or into a rocks glass over a large ice cube, using a Hawthorne strainer and a fine-mesh strainer to catch any small ice shards or pulp.

Finish & Garnish

Express a lemon twist over the surface of the drink to release oils, then rub the peel along the rim and drop it into the cocktail (or balance it on the rim). If desired, grate a small amount of nutmeg over the top or add a Luxardo cherry for an extra touch.

Serve immediately. Advise guests to sip slowly — the overproof rum adds a pronounced warming kick.
