Prepare glass

Chill a coupe or Nick & Nora glass by filling with ice and cold water, or place in the freezer for a few minutes.

Dry shake (if using egg white)

In a cocktail shaker, add 0.5 oz egg white (or aquafaba if vegan), 2 oz gin, 0.5 oz pomegranate syrup, 0.5 oz Green Chartreuse, 0.75 oz fresh lime juice, and 0.25 oz simple syrup (if using). Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build a silky foam.

Wet shake

Open the shaker, add a generous handful of ice (about 1 cup). Seal and shake vigorously for 12–18 seconds until the shaker is well chilled and slightly frosted.

Strain

Dump the ice from the chilled glass. Double-strain the cocktail into the glass using a fine mesh strainer (to remove ice shards and any coagulated egg white) to achieve a smooth texture and a clean presentation.

Garnish and finish

Garnish with a lime wheel or twist laid on the foam, and optionally scatter 3–5 pomegranate seeds on top for a visual pop. Serve immediately.
