Combine and shake
In a cocktail shaker, add Midori (1.5 oz), Licor 43 (1 oz), fresh lime juice (0.5 oz), fresh lemon juice (0.5 oz), apple juice (2 oz), and a scoop of ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Double strain
Discard the ice or water from the chilled glass. Double strain the cocktail into the chilled coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp for a silky texture.
White Chocolate Foam (float)
Melt white chocolate
Place the finely chopped white chocolate (1 oz) in a small heatproof bowl. Warm the heavy cream (2 tbsp) and milk (2 tbsp) together until just steaming (do not boil) — about 20–30 seconds in the microwave or on the stovetop. Pour the hot cream/milk over the chocolate and let sit 30 seconds, then gently whisk until fully melted and smooth. Add simple syrup (1 tsp) if you want extra sweetness.
Add emulsifier
Stir in liquid lecithin (1 tsp) until thoroughly combined. Lecithin helps create a stable foam. If using lecithin powder, dissolve it first in a small amount of warm liquid before adding.
Aerate to foam
Transfer the white chocolate mixture to a tall container. Use an immersion blender and blend just below the surface for 20–30 seconds until a light, airy foam forms on top. Alternatively, you can chill the mixture briefly (5 minutes) then vigorously whisk to create foam, though the texture will be less stable.
Float the foam
Gently spoon or pour the white chocolate foam atop the strained cocktail. Aim for a 1/4–1/2-inch layer so each sip gets a creamy white chocolate note without overwhelming the drink.
Garnish & Finish
Garnish the foam: place a thin apple slice on the rim or float it on the foam, add a lime twist across the apple or perched on the rim, and top with a micro mint sprig or edible flower if using.
Serve immediately while the foam is fresh. Encourage guests to sip through the foam to get the contrast of bright citrus, melon and vanilla-citrus liqueur with the creamy white chocolate top.
