House Burger Sauce

In a small bowl combine vegan mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, garlic powder, onion powder, hot sauce (if using), and salt. Whisk until smooth and well combined. Taste and adjust seasoning. Chill in refrigerator while preparing the rest of the meal (at least 10 minutes).

House Fries (or Salad — optional)

Prep potatoes

Wash and scrub potatoes well. Cut into 1/4–1/2-inch matchsticks or wedge shapes, depending on preference. Pat dry thoroughly with paper towels to remove excess moisture.

Toss and season

Place cut potatoes in a bowl and toss with vegetable oil, garlic powder, smoked paprika, and salt until evenly coated.

Cook fries

Oven method: Spread fries in a single layer on a parchment-lined baking sheet and roast at 230°C / 450°F for 20–30 minutes, flipping once, until golden brown and crisp. Frying method: Heat 1–2 inches of oil in a skillet to 175°C / 350°F and fry in batches until golden, 3–5 minutes per batch; drain on paper towels. Garnish with chopped parsley and extra salt to taste.

If serving a salad instead: toss mixed greens, sliced cucumber, cherry tomatoes and a light vinaigrette; set aside and serve alongside the burger.

Slice onions and toast buns

Thinly slice the red onion into rings. Spread 1 tsp butter or brush oil on the cut sides of each bun. Toast buns in a skillet over medium heat until golden and slightly crisp, 1–2 minutes. Remove and set aside.

Season patties

Pat the plant-based patties dry with a paper towel. Lightly season both sides with salt and black pepper.

Cook patties

Heat a nonstick or cast-iron skillet over medium-high heat with a small amount of oil or cooking spray. Add patties and cook according to package or recipe instructions — typically 3–4 minutes per side until browned and warmed through. If using thicker homemade patties, cook until internal temperature reaches recommended temp for that product and exterior is nicely seared.

Melt cheese

About 1 minute before the patties finish cooking, place a smoked Applewood vegan cheese slice on each patty. Cover the skillet with a lid for 30–60 seconds to help the cheese soften and melt.

Assemble burgers

Spread a generous tablespoon of house burger sauce on the bottom half of each toasted bun. Place the cheesy plant patty on top. Add 3 slices of dill pickle and several rings of red onion. Spoon an additional 1 teaspoon of sauce on the top bun if desired. Close burger and press lightly to set.

Serve immediately with house fries or salad. Offer extra sauce and pickles on the side.
