Buffalo Chicken Patties
Mixing
In a large bowl combine ground chicken, egg, panko, Worcestershire, garlic powder, onion powder, kosher salt, and black pepper. Mix gently with a fork or your hands just until combined — avoid overworking to keep patties tender.
Form Patties
Divide mixture into 4 even portions (about 4 oz each for 4 burger servings). Shape into slightly oval patties about 3/4 inch thick, making a slight thumb indentation in the center to prevent doming while cooking.
Cook Patties
Heat a large skillet or cast-iron pan over medium-high heat and add 1 tbs neutral oil. When shimmering, add patties (work in batches if necessary). Cook 4–5 minutes on the first side until golden, then flip and cook 3–4 minutes on the second side until internal temperature reaches 165°F (74°C). Remove to a plate and tent with foil.
Buffalo Glaze
In a small saucepan or microwave-safe bowl, melt 2 tbs butter then stir in 1/2 cup Frank's RedHot (or preferred hot sauce). Warm gently until combined. Brush or toss cooked patties in the hot butter-hot sauce mixture to coat them evenly, or return patties to the skillet and pour glaze over them for 30–60 seconds to adhere.
Firecracker Ranch Sauce
Whisk together mayonnaise, buttermilk, sour cream, dried dill, garlic powder, onion powder, smoked paprika, honey, Sriracha, lemon juice, salt and black pepper in a small bowl until smooth. Taste and adjust heat or sweetness — add more Sriracha for spice or more honey for sweetness. Refrigerate at least 15 minutes to let flavors meld.
Buns & Assembly
Assemble Burgers
Spread 1–2 tbs firecracker ranch sauce on the bottom bun. Place a handful of shredded lettuce (if using) on the sauce, then set a glazed buffalo chicken patty on top. Add 2–3 dill pickle slices and a generous spoonful (about 2 tbs) of sweet pickled jalapeños. Spoon another 1 tbs sauce on the top bun and place on burger. Repeat for remaining burgers.
Serve
Serve immediately while patties are hot with extra pickled jalapeños and extra ranch on the side. Estimated suggested sides: potato fries or coleslaw.
