Prep pickles
Drain the dill pickle chips well in a colander for at least 10 minutes. Pat each chip dry with paper towels. Excess brine will make the batter fail to adhere and make oil splatter.
Make dry mix
In a shallow bowl or wide dish whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika until uniform.
Make wet batter
In a separate bowl whisk the egg lightly, then add the buttermilk and cold club soda (or beer). Stir to combine. Pour the wet mixture into the dry mix and whisk until just combined — it should be a thick but pourable batter. If too thick, add 1 tablespoon more club soda; too thin, add 1–2 tablespoons flour. Let rest 5 minutes.
Prepare crumb station
Place the panko breadcrumbs in a shallow plate. Set a wire rack lined with paper towels nearby for draining fried pickles.
Heat oil
In a heavy-bottomed pot or Dutch oven add enough vegetable oil to reach about 2 inches deep (approximately 3–4 cups depending on vessel). Heat oil over medium-high to 350°F (175°C). If you are using the 1 cup listed for convenience in the ingredient list, instead use enough to submerge batches of pickles—adjust quantity to your fryer/pot size. Test heat by dropping a small pinch of batter: it should sizzle and rise immediately.
Batter and double-coat
Working in small batches (6–8 chips at a time), dip a dried pickle chip into the batter, letting excess drip back into the bowl. Immediately press the battered pickle into the panko plate to coat both sides evenly. Shake gently to remove excess crumbs and set on the rack while you fry the first batch.
Fry pickles
Carefully lower battered, panko-coated pickles into the hot oil with a slotted spoon or spider. Fry in batches without crowding for 2–3 minutes, turning once, until golden brown and crisp. Maintain oil temperature around 325–350°F (160–175°C) — lower temperature will make them greasy, higher will brown too fast. Use an instant-read thermometer if available.
Drain & season
Remove pickles to the paper-towel-lined rack. Immediately sprinkle lightly with extra salt. Allow fried pickles to rest 1–2 minutes to crisp further before serving.
Firecracker Ranch Sauce
Make the sauce while pickles rest: In a bowl combine mayonnaise, sour cream, ranch seasoning (or the dried-herb mix), Sriracha, sweet chili sauce (or honey), rice vinegar, lime juice and salt. Whisk until smooth. Add buttermilk, 1 tablespoon at a time, until the sauce reaches a dipping consistency (about 2 tablespoons). Taste and adjust heat (more Sriracha) or sweetness (more sweet chili/honey) as desired.
Chill for at least 10 minutes if time allows so flavors meld. Sprinkle with a pinch of smoked paprika and chopped cilantro/parsley just before serving for color and a smoky note.
Finishing & Serving
Serve immediately while hot and crispy. Leftovers can be reheated in a 400°F (200°C) oven for 5–7 minutes to restore crispness, but they are best fresh.
