Prepare Glass & Garnish

Chill and set pearls

Chill a coupe or martini glass in the freezer for 5–10 minutes. Spoon the passionfruit pearls into the bottom of the chilled glass (about 1 tablespoon). Arrange a small strip of lemon/yuzu zest on the side of the bowl of the glass and set the mint sprig nearby for final placement.

Mix Cocktail

Combine base ingredients

In a cocktail shaker add 2 oz Bombay Sapphire gin, 0.5 oz limoncello, 0.5 oz fresh yuzu juice, and 0.25 oz fresh citrus juice. Add 0.25 oz simple syrup for balance.

Add color and optional foam

Add 0.25 oz Disco Blue syrup (or blue curaçao) to the shaker for the signature blue hue. If you want a silky foamed top, add 0.5 oz aquafaba (or egg white) now.

Dry shake (if using foam)

If you added aquafaba or egg white, dry-shake (no ice) vigorously for 15–20 seconds to emulsify and build foam.

Shake with ice

Add plenty of ice (about 6–8 large cubes) or crushed ice to the shaker. Shake vigorously for 12–18 seconds until well chilled and the shaker is cold to the touch.

Finish & Serve

Strain into glass

Double-strain the cocktail into the chilled glass with the passionfruit pearls. If you prefer a small fizz, leave a little room at the top.

Top and garnish

Optionally top with 1 oz soda water to add effervescence, pouring gently to preserve foam. Float a small amount of Disco Blue syrup (a drop or two) on the foam to create a nebula-like swirl if foam was made. Place the mint sprig and the citrus zest artfully on the rim or floated in the drink.

Final touch

Serve immediately so guests can enjoy the visual contrast of the blue, the citrus aroma, and the popping passionfruit pearls at the bottom.
