Wine Making Process
1. Harvesting
Carefully hand-harvest the Chardonnay grapes, ensuring only the best quality fruit is selected. Transport the grapes to the winery immediately to maintain freshness.
2. Pressing
Gently press the grapes to extract the juice. Aim to minimize the extraction of skin and seeds to avoid bitterness.
3. Fermentation
Transfer the juice into fermentation tanks and add the yeast. Allow fermentation to take place at a controlled temperature of about 18°C (64°F) for 2-3 weeks, until the sugars have been converted to alcohol.
4. Malolactic Fermentation
After primary fermentation, inoculate the wine with malolactic bacteria to convert malic acid to lactic acid, softening the wine's acidity.
5. Aging
Transfer the wine into oak barrels for aging. Allow it to mature for 6-12 months, tasting periodically to monitor flavor development.
6. Bottling
Once aging is complete, add sulfur dioxide to stabilize the wine and filter if necessary. Bottle the wine under sterile conditions.
