    Chill glass

    Place a coupe or martini glass in the freezer for 5 minutes or fill it with ice water while you prepare the cocktail to chill.

    Measure and pour

    Add 2 oz rye whiskey, 1 oz Cocchi Dopo Teatro, and 3 dashes cherry bark bitters into a mixing glass or Boston shaker filled halfway with ice.

    Stir

    Stir the mixture gently with a bar spoon for 20–30 seconds (about 20–30 full rotations) until the outside of the mixing glass is well chilled and the drink is properly diluted (roughly 20–25% dilution).

    Prepare glass

    If you chilled the glass with ice water, dump the ice water now and briefly wipe the inside with a clean cloth or napkin so no water remains.

    Strain

    Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and (optional) fine mesh strainer to remove any small ice shards.

    Garnish

    Express the oils of a half lemon twist over the drink (optional) and drop it in or discard. Add 1 maraschino cherry on a pick and rest it in the glass.

    Serve

    Serve immediately. Suggest tasting the balance; if it feels too sweet, reduce Cocchi Dopo Teatro by 0.25 oz next time; if too spirit-forward, increase Cocchi by 0.25 oz.
