Method

Cocktail

  1. 1

    Chill glass (optional)

Place an old-fashioned glass in the freezer or fill it with ice water to chill while you prepare the cocktail (about 5 minutes). Discard ice water before serving.

  2. 2

    Build and stir

In a mixing glass add 1.25 oz reposado tequila, 0.75 oz Cocchi Torino, 0.75 oz Antica Formula (sweet vermouth), 0.25 oz Cappelletti, and 0.25 tsp agave syrup. Fill the mixing glass with large ice and stir with a bar spoon for 30–45 seconds until well chilled and slightly diluted (about 20–25 full spoon rotations).

  3. 3

    Prepare serving glass

If chilled, remove the old-fashioned glass from the freezer or dump the ice water. Add a single large ice cube to the glass.

  4. 4

    Strain and finish

Strain the stirred mixture into the prepared old-fashioned glass over the large ice cube using a Hawthorne or julep strainer. This ensures a clear, slightly viscous pour reminiscent of a Negroni but with tequila's warmth.

  5. 5

    Garnish and serve

Express the oils of an orange twist over the surface of the cocktail by holding the twist about 2–3 inches above the drink and giving it a good, quick squeeze so the oils spray onto the cocktail. Rub the peel around the rim if desired, then drop the twist into the glass as garnish. Serve immediately.
