Method
Preparing the Vada
Soak the Dal
Soak the split urad dal in water for at least 4 hours or overnight. Drain and rinse.
Blend the Dal
In a blender, combine the soaked urad dal, grated ginger, green chilies, and salt. Blend to a smooth batter, adding a little water if necessary.
Fry the Vadas
Heat oil in a deep frying pan. Once hot, drop spoonfuls of the batter into the oil and fry until golden brown. Remove and drain on paper towels.
Preparing the Ginger Yoghurt Sauce
Mix the Ingredients
In a bowl, combine yoghurt, grated ginger, salt, cumin powder, black salt, and chaat masala. Whisk until smooth. Add water to reach desired consistency.
Assembly
Soak the Vadas
Place the fried vadas in a bowl of water for about 10 minutes to soften. Then gently squeeze out excess water.
Serve
Arrange the soaked vadas on a serving plate and pour the ginger yoghurt sauce over them. Garnish with chopped coriander.
