Preparing the Crepe Batter
Mix Ingredients
In a mixing bowl, combine the all-purpose flour, milk, eggs, and salt. Whisk until smooth.
Add Melted Butter
Stir in the melted butter until fully incorporated.
Rest the Batter
Let the batter rest for at least 30 minutes at room temperature.
Making the Coconut & Jaggery Filling
Combine Ingredients
In a saucepan, combine grated coconut, jaggery, cardamom powder, and water.
Cook the Filling
Cook over low heat until the jaggery melts and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.
Cooking the Crepes
Heat the Pan
Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter.
Cook the Crepes
Pour about 1/4 cup of batter into the pan, swirling to evenly coat the bottom. Cook until the edges lift and the bottom is lightly golden, about 2 minutes. Flip and cook for an additional minute. Repeat with the remaining batter.
Assemble the Crepes
