    Prepare ingredients

    Trim and cut string beans into 1–1.5 inch pieces. Thinly slice shallot/onion, Thai chilies, and long hot pepper. Mince garlic. Measure sauces and have basil leaves ready (keep whole leaves or remove large stems). If using meat, crumble or chop into small pieces so it cooks quickly and evenly.

    Heat wok

    Place a wok or large nonstick skillet over high heat until very hot (smoking lightly). Add 2 tbs neutral oil and swirl to coat.

    Sauté aromatics

    Add the minced garlic and sliced Thai chilies to the hot oil. Stir constantly for about 15–30 seconds until fragrant and just beginning to color, taking care not to burn the garlic.

    Cook shallot and beans

    Add the sliced shallot/onion and the trimmed, cut string beans. Stir-fry for about 1.5–2 minutes until the shallot softens and the beans develop bright color but remain crisp-tender.

    Brown the protein

    Push vegetables to the side of the wok. Add the crumbled ground pork (or chosen protein) to the hot pan and spread into a thin layer. Let it sear 30–45 seconds, then stir and break into small pieces. Cook until no longer pink, about 2–3 minutes.

    Combine and season

    Stir everything together. Add light soy sauce (1 tbs), oyster sauce (1 tbs), dark soy sauce (1 tsp, optional), fish sauce (1 tsp), sugar (1 tsp), and 2 tbs water or stock. Stir-fry for another 1–2 minutes, coating all ingredients and allowing the beans to finish tendering. Taste and adjust seasoning — add a little more fish sauce for saltiness or sugar to balance heat if needed.

    Finish with basil

    Turn off the heat when the vegetables are cooked to your liking but still vibrant. Immediately add the basil leaves and freshly ground black pepper (1 tsp). Toss vigorously for 15–30 seconds until basil is wilted and evenly distributed.

To serve

    Divide cooked jasmine rice among plates (about 1 cup per serving). Spoon the Pad Krapraw over or beside the rice.

    If desired, top each serving with a fried egg (sunny-side-up) and garnish with sliced cucumber or lime wedges. Serve immediately while hot.
