Prepare the Ingredients
Thinly slice the shallots and celery. Dice the Granny Smith apple and set aside. Roughly chop the cashew nuts.
Season the Fish
Pat the walleye fillets dry with paper towels, then season both sides with salt.
Coat the Fish
Dredge each walleye fillet in flour, shaking off excess flour.
Fry the Fish
In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated walleye fillets and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Sauté the Vegetables
In the same skillet, reduce the heat to medium and add the shallots, celery, and cashew nuts. Sauté for about 2-3 minutes until the shallots are translucent.
Combine and Serve
Add the diced Granny Smith apple and fish sauce to the skillet, stir to combine, and cook for an additional 1-2 minutes. Serve the fried walleye topped with the sautéed vegetable mixture.
