1. Prepare the Broth
In a large pot, combine the vegetable broth, galangal, lemongrass, and kaffir lime leaves. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes to infuse the flavors.
2. Add the Vegetables
After simmering, add the sliced mushrooms and continue to cook for another 5 minutes until they are tender.
3. Incorporate the Coconut Milk
Stir in the coconut milk and roasted cauliflower, and allow the mixture to heat through for about 5 minutes.
4. Season the Porridge
Add fish sauce (or soy sauce), Thai chili, and lime juice to taste. Stir well and adjust seasoning if necessary.
