Panipuri shells

Method

Panipuri shells

    If using store-bought shells, place them in an airtight container to keep crisp until serving. Check each shell for cracks; reserve whole shells only. No cooking required.

Shrimp filling

    Prepare shrimp

    Rinse shrimp and pat dry. Chop shrimp coarsely into small 4–6 mm pieces so they fit comfortably in a panipuri shell.

    Heat a small skillet over medium heat and add 1 tsp neutral oil. Add minced garlic and chopped red chili; sauté 30 seconds until fragrant but not browned.

    Add chopped shrimp and sauté 1–2 minutes until they turn opaque. Add shredded coconut, sliced kaffir lime leaves, fish sauce, lime juice, salt and pepper. Cook 30–45 seconds more to meld flavors—do not overcook shrimp. Remove from heat and transfer to a bowl to cool to room temperature.

    Stir in chopped cilantro into the cooled shrimp mixture. Taste and adjust seasoning (more lime, salt, or chili) so the filling is bright and slightly tangy.

Coconut kaffir lime pani (spicy-sour water)

    Combine cold water and coconut milk in a blender pitcher.

    Add cilantro stems, mint leaves, kaffir lime leaves, green chili, tamarind paste, brown sugar and salt to the blender. Blend on high for 20–30 seconds until herbs are finely pureed and the mixture is homogenous.

    Strain the blended mixture through a fine-mesh sieve into a bowl or jug, pressing on solids to extract liquid. Discard solids. Stir in fresh lime juice. Chill the pani in the refrigerator at least 15 minutes; serve cold. Taste and adjust: add more lime for acidity, sugar for sweetness, or salt for balance.

Assembly & garnish

    Just before serving, gently make a small hole on top of each panipuri shell with your thumb or spoon to create an opening for filling.

    Using a small spoon, place about 1 teaspoon (approximately 8–10 g) of the shrimp filling into each panipuri shell. Do not overfill—leave space for the pani.

    Arrange filled panipuri on a serving platter in a single layer. Garnish each with a tiny sprig of cilantro and one micro herb leaf; press gently so it stays in place.

    Serve immediately with the chilled coconut kaffir lime pani in a small pitcher or bowl. To eat, either pour about 15–20 ml (1 tbs) of pani into each shell just before giving to guests, or serve the pani in a shallow bowl so guests can dip/pop the whole filled puri into the liquid and eat immediately. Provide lime wedges on the side for extra brightness.

    If making ahead: keep pani chilled and shrimp filling refrigerated; assemble shells only at service to maintain crispness.
