Method
Prepare vegetables and fruit
Halve the grapes and set aside.
Wash and tear the lettuce into bite-sized pieces; spin or pat dry.
Dice the tomatoes into roughly 1/2-inch pieces, removing excess seeds if you want a less watery salad.
Make the cream sauce
Drain the silken tofu well by pressing gently between paper towels or a clean kitchen towel for 5 minutes to remove excess water; transfer to a blender or food processor.
Add plain yogurt, mayonnaise, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, olive oil, 1 tsp salt and 1/2 tsp black pepper to the blender with the silken tofu.
Blend until completely smooth and creamy, about 30–60 seconds. If the dressing is too thick, add up to 2 tablespoons cold water, 1 tablespoon at a time, to reach a pourable but still creamy consistency. Taste and adjust seasoning (add more lemon for brightness, more salt or a pinch of sugar if needed).
Prepare and crisp tofu (optional)
If you want some browned tofu pieces for texture, press the extra-firm tofu between paper towels or a cloth to remove moisture, then cut into 3/4-inch cubes.
Heat 1 tablespoon neutral oil in a nonstick or cast-iron skillet over medium-high heat. When shimmering, add tofu cubes in a single layer and cook without disturbing for 3–4 minutes to form a golden crust. Turn and brown on at least two other sides, about 6–8 minutes total. Season lightly with a pinch of salt while cooking.
Alternatively, for a softer option, crumble the extra-firm tofu into bite-sized pieces and reserve chilled (no frying).
Assemble the salad
In a large bowl combine the cooled potatoes, carrots, halved grapes, diced apple, diced tomato, torn lettuce and chopped parsley (if using).
Add the prepared tofu: either the pan-fried golden cubes (warm) or the chilled crumbled tofu, distributing evenly through the salad.
Pour about half of the cream sauce over the salad and gently toss to coat. Add more sauce as desired to reach preferred creaminess — you will likely use 3–5 tablespoons per serving depending on preference.
Taste and adjust with additional salt, pepper, or lemon juice. If the salad sits for a while, toss again before serving.
