Prep

Prepare noodles

If using refrigerated fresh wide rice noodles, gently separate any stuck pieces by hand or with a few drops of warm water. If using dried, soak per package instructions until pliable, then drain. Pat dry if very wet.

Slice carrot thin on the diagonal into 1/8-inch slices. Cut broccoli into bite-size florets. Mince garlic and slice scallion into 1-inch pieces. Crack eggs into a small bowl and beat lightly with a pinch of salt.

Mix sauces: in a small bowl combine light soy sauce, dark soy sauce, oyster sauce, sugar, fish sauce and white pepper. Stir until sugar dissolves.

Cook vegetables

Heat a large wok or heavy skillet over high heat until very hot (a few drops of water should sizzle away). Add 1 tablespoon neutral oil and swirl.

Add minced garlic and stir-fry 10–15 seconds until fragrant but not browned.

Add carrot slices and broccoli florets. Stir-fry 2–3 minutes until broccoli is bright green and carrot begins to soften. If vegetables need more time, sprinkle 1–2 tablespoons water and cover briefly 30–45 seconds to steam, then uncover and return to high heat.

Push vegetables to the side of the wok (or transfer to a plate if the wok is too crowded).

Eggs & noodles

Add remaining 1 tablespoon neutral oil to the hot wok. Pour in beaten eggs and swirl to make a thin omelet. Let set for 10–20 seconds, then scramble lightly until just set but still tender. Break the eggs into pieces and move them to one side.

Add the prepared rice noodles to the wok with the eggs and vegetables. Use tongs or spatula to separate and spread the noodles so they contact the hot surface; fry undisturbed 20–30 seconds to get some light char (this contributes the characteristic smoky flavor).

Pour the combined sauce evenly over the noodles. Toss vigorously to coat noodles, eggs, and vegetables. Continue stir-frying 1–2 minutes until sauce is absorbed and noodles are heated through. If mixture seems dry, add 1–2 teaspoons water and toss.

Adjust seasoning: taste and add a little extra light soy or fish sauce for saltiness, or extra dark soy to deepen color if desired.

Finish & serve

Turn off heat. Drizzle sesame oil over the noodles and toss in sliced scallions. Combine everything thoroughly.

Transfer Pad See Ew to a plate or shallow bowl and serve immediately. Offer extra white pepper or chili flakes at the table if desired.
