Preparation of Base
Combine Base Ingredients
In a mixing bowl, whisk together the coconut milk, sugar, vanilla extract, and salt until the sugar is fully dissolved.
Flavoring the Ice Cream
Prepare Jackfruit
Fold in the chopped jackfruit into the coconut milk mixture until evenly distributed.
Add Coffee Flavor
In a separate small bowl, dissolve the instant coffee granules in 2 tablespoons of hot water. Once dissolved, add this mixture to the base and mix well.
Infuse Thai Tea
In a small saucepan, bring 1 cup of water to a boil and add the Thai tea leaves. Let it steep for about 5 minutes, then strain out the leaves. Allow the tea to cool, then mix it into the ice cream base.
Churning and Freezing
Churn the Mixture
Pour the final mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
Freeze the Ice Cream
Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.
